This special cacao grows in the ancient cacao region of Chiapas.
It might be closest to the high quality cacao cultivated by the Maya centuries ago. Genetically it is a rare criollo variety of white seeds.
José Maria continues to cultivate this cacao that was carefully selected by his great grandparents. It is a very delicate cacao to grow and genetically unique. Because the farm is so small and this cacao rarely exists anymore we are really happy to share this small batch.
The cacao is much lighter in taste than you might be used to. It is very low in bitterness and has a rich and soft taste. Just making this cacao pure on a water base is delicious and soft.
Taste notes: very soft, earthy, low bitterness, with hints of tobacco, caramel and nuts.
Chiapas was an important centre of Maya civilization in pre-colonial Mesoamerica. Cacao thrived in this region and the Maya were well known for the special cacao they cultivated here. It takes a lot of attention to grow this special cacao and amongst it are the lagarto, pentágona and other criollo varieties.
